The only traditional Red Leicester, made to a traditional recipe using handmade methods, and raw milk. Jo and David Clarke are dairy farmers, as well as cheesemaker's, and have 150 strong pedigree Holstein-Friesian's, that are pasture-fed on Sparkenhoe Farm.
Sparkenhoe is an old Leicestershire name meaning "Gorsey Nob". It was the name given to the old medieval one hundred area, and as the farm is situated in the middle of this, so it was named 'Sparkenhoe Farm'.
