Langres originates from the town of the same name, situated in the Champagne-Ardenne region, close to the border with Burgundy.
The distinctive orange rind colour comes from the washing process of this cheese. Firstly, the cheese is washed in a brine and annatto solution, and then on to a wash of local 'Eau de Vie', distilled from grape skins.
Washing helps to break down the lactic core, and is the catalyst for the rich, meaty flavours that ensue.
Similar to a Munster or Epoisses, Langres is eye-catching on a cheeseboard, with it's beautiful geotrichum rind patterns.
