Vacherin Mont d'Or is one of the last remaining, true seasonal cheeses, produced using the milk from Montbeliarde cows, that in the summer, is used to make Comte.

Within the winter months the cows are grazed in the lower valleys, with the added nutrition of silage; a feed that is prohibited in the making of Comte. These two variable produce a particularly rich and fragrant milk, which is perfect for making Mont d'or. 

This cheese has a wonderful undulating rind, is beautifully wrapped in spruce bark, for that added woody flavour, as well as to contain the liquid paste. It is then placed in it's own box for ripening, and ultimately, to create the perfect centrepiece for any table.
