Quicke’s Mature Cheddar is a traditional West Country Farmhouse Cheddar, crafted by Mary Quicke and her team on their family farm in Devon, where they have been making exceptional cheeses for over 500 years. The farm’s lush pastures, rich in Devon’s unique microflora, produce milk that’s perfect for cheesemaking, bringing depth and complexity to every wheel of Quicke’s Cheddar.
Matured for up to a year, this cheddar is aged in clothbound wheels, allowing it to develop a rich, nutty flavour and satisfyingly crumbly texture. Each wheel is meticulously turned by hand, a process that keeps the flavours developing in harmony and produces an earthy character alongside creamy, buttery notes.
The name ‘Cheddar’ comes from the process of ‘cheddaring’ during the make. Here, slabs of curd are stacked and turned to help drain whey, a technique that lends cheddar its distinctively firm, smooth texture and bold, savoury taste.
